Coffee Cheesecake with Cookie Crumb Crust

Coffee CheesecakeCrust Ingredients & Amounts

  • 8 oz of your favorite cookie, finely crushed
  • 1/2 cup of melted butter
  • 9-inch pan sprayed with cooking spray

Instructions

  • Mix the finely crushed cookie crumbs with the melted butter and press the mixture onto the bottom and sides of the pie pan
  • Set Aside

Filling Ingredients & Amounts

  • 2 (8) oz packages of cream cheese
  • 1/2 cup of granulated sugar
  • 3 medium eggs
  • 1 cup of flour, sifted
  • 1/4 cup of strong cooled coffee
  • 1-teaspoon vanilla extract

Instructions

  • Preheat oven to 400 ° F (200 ° C)
  • Beat cream cheese, sugar and vanilla extract at medium speed with an electric mixer until blended
  • Add eggs, 1 at a time, beating just until yellow disappears after each addition
  • Add flour and cooled strong coffee, beating at low speed until well blended
  • Pour the mixture into the prepared piecrust and smooth the top
  • Spoon the Mocha Coffee Sauce in lines on the top and gently swirl with a knife
  • Bake for 30 minutes
  • chill for 3-4 hours
